A personal favorite of the Bearded Baker, this loaf brings together a timeless flavor pairing—kalamata olives and fresh thyme—to create something truly special. Naturally fermented over 36 hours, it’s crafted for those who appreciate depth of flavor and artisanal quality.

Weighing approximately 600g, this 100% sourdough loaf is made with premium Australian flour, including spelt—an ancient grain known for its slightly sweet, nutty character. The result is a beautifully balanced bread that’s delicious on its own and even better as part of a charcuterie platter.
